Baingan Bharta originated as a winter treat in the farms of Punjab. It is an interesting way to cook eggplant. Housewives in Punjab, split roast the eggplant and cook it to a hash with crunchy onion and plum tomatoes. We would like to call it the baba Ganoush of India.

Make a 2cm cut in the side corner of the pouch. Place upright on a microwaveable plate. Heat on full power for 2 minutes. Remove pouch from microwave holding the unopened side. (Care should be taken when handling the heated product). Stir & serve hot.
Above heating time may vary depending on microwave wattage & may need adjusting.
Take unopened pouch & immerse in boiling water for 3-5 minutes. Remove pouch, snip & serve.
